Help with tomato plant, it's not growing and the fruit is blotchy red/orange/yellow?

sounds like too much overhead watering i am in high desert too. you have to deep water the tomatoes once maybe twice a week this mean a slow drip at the base of plant directly into the soil, do this overnight for new plants this causes the roots to go deep to seek the water, removing the first set of leaves at the base of the plant also helps to strengthen the plant. never water the leaves or the fruit directly this causes the water to cook the plants in desert heat. too much water also cause the fruit to burst or develop fungal infections , try rabbit manure for more natural fertilizing. Miracle grow is often too harsh and it burns the plants . tomatoes changing colors while ripening is typical but not the soft blotchy fruit. remember tomatoes ARE weeds too! and like most weeds they often do best when not over cared for.
